Arthur B's Killer Beans

2 pounds bacon
2 onions
4 pounds pinto beans (dry)
6 Tablespoons Red chile powder
3 Tablespoons cumin
2 carrots
2 celery stalks
1 smoked ham shank

Soak beans over night. Cut bacon into 1" pieces and throw it in a big pot along with the onions (diced). After a few minutes, throw in the carrots and celery and saute them in the bacon. Rinse the beans and add them to the pot. Throw in the ham shank and cover with water. Add the cumin and red chile powder, stir it all up and bring to a raging boil. Reduce to medium boil and stir ocassionally until beans are soft (2 hrs+/-). May need to add more water.
